About Just Right Coffee
Just Right Coffee is run by Justin and Lana Schroeder, a husband and wife who met working at a coffee shop. Lana has owned an espresso machine since high school, and Justin, an engineer, dug into the science of coffee. They roast their own beans and named the cart after the Goldilocks tale. The cart is a regular at the Pueblo Farmers Market at Mineral Palace and also caters events.
