Gato Pescado Coffee is owned by Xavier, who designed and built the cart as his Cal Poly senior project after working as a supervisor at a donut and coffee shop. The cart pops up at the Downtown SLO Farmers' Market and local fairs, and caters events across San Luis Obispo County. Cups and other goods are recyclable or compostable at local facilities.
