Canyons Coffee is run by Maddy and Steven Swank, a husband-and-wife team who moved to Utah from Kansas City. They served their first event at the Rock Climbing World Cup in Salt Lake City in 2022 and opened a coffee shop in West Jordan in 2024. They have served more than 650 events, from Sundance Film Festival to resorts like Montage and Stein Eriksen. Their carts roll indoors and run on a standard outlet, with no generator.
